Pomfret, or butterfish, is delicious and is healthy when baked in the oven or steamed. You might not be able to get pomfret locally, in which case feel free to switch it for cod, hake, plaice, tilapia or another white fish. The resulting dish will be equally impressive.

Use thawed or fresh fish for this dish. Since you are going to bake it in a sauce it will not make a lot of different but, if you are using thawed fish, make sure you rinse it and pat it dry with paper towels before you start making the recipe.
