Sea Perch

This interesting perch recipe features perch, which is a tasty fish, along with a red curry sauce. The fish is coated in a light batter and then served in a pool of sauce. The sauce does have quite a kick to it, since it is based on red curry paste, but the fish sauce, palm sugar, and oil soften the sharpness of the curry paste, making the sauce more palatable and smooth.

On top of that you have a garnish of cucumber and parsley which goes well with the fish and counteracts the fieriness of the sauce. If you prefer mild flavors, feel free to reduce the amount of curry paste used, adding more oil and water instead. You could even add some coconut milk to the sauce if you want it to be really mild and silky.

Perch comes in various forms and perch filets are particularly versatile because you can do a lot of different things with them, such as grilling or baking them, or even coating them in your favorite batter and frying them to crisp perfection. You can get different types of perch from the tiny Sauger variety which rarely weighs over two pounds and can be cooked whole, to the Walleye variety which is cut into steaks or filets and can weigh up to twenty five pounds.
