This recipe freezes well so you might like to double the recipe in anticipation of future dinners. You can either use penne pasta or something like rigatoni or macaroni. - 1⅓ lbs penne pasta
- 2 ½ cups milk
- 2 oz all-purpose flour
- 2 oz butter
- ½ lb grated cheddar cheese
- ½ chopped red onion
- 11 oz canned tuna packed in water drained
- 3 oz canned peas drained
- 3 oz canned corn kernels drained
- Handful of chopped fresh parsley
- Salt and black pepper to taste
- Preheat the oven to 350 degrees F.
- Boil the pasta for 2 minutes less than the time given on the package.
- Melt the butter in a pan and stir in the flour. Cook for 1 minute then stir in the milk gradually, so you get a thick white sauce.
- Take the sauce off the heat and stir in most of the cheese.
- Drain the pasta and combine it with the white sauce, corn, tuna, red onion, peas and parsley, then season to taste.
- Transfer the mixture into a baking dish and top it with the remaining cheese.
- Bake for 18 minutes or until the cheese on top is golden brown.
