Ingredients
  • 5 teaspoons olive oil
  • 4 diced shallots
  • 1 sliced onion
  • 1 pound sliced bacon
  • 1 chopped garlic clove
  • 16 ounce package fettuccini pasta
  • 3 egg yolks
  • ½ cup heavy cream
  • ¾ cup shredded Parmesan cheese
  • 4 oz peeled shrimp (optional)
  • Salt and pepper, to taste
Instructions
  1. Heat the olive oil in a large heavy saucepan over a medium heat.
  2. Sauté the shallots until softened.
  3. Stir in the onion and bacon, and cook until bacon is evenly browned.
  4. Stir in the garlic when the bacon is about half done.
  5. Remove from the heat.
  6. Bring a large pot of lightly salted water to a boil.
  7. Add the pasta and cook for 8 to 10 minutes or until al dente.
  8. Drain the pasta, then return it to the pot.
  9. Sauté or boil the shrimp until pink and cooked through, if using.
  10. In a medium bowl, whisk together the egg yolks, cream and shredded Parmesan.
  11. Pour the bacon mixture over the pasta, then stir in the cream mixture and shrimp if using.
  12. Season with salt and pepper to taste and serve right away.
