  • 4 oz shelled shrimp
  • 4 oz cooked ham
  • 1 chopped onion
  • 2 sliced green onions
  • 2 eggs
  • ½ cup fresh green peas
  • 4 cups cold cooked rice
  • ¼ cup oil for stir-frying, or as needed
  • 1 teaspoon cornstarch mixed with 1½ teaspoons water
  • Fresh cilantro or parsley, for garnish
For the Marinade:
  • 1 tablespoon oyster sauce
  • 1 teaspoon soy sauce
  • 1 teaspoon salt
  • ⅛ teaspoon black pepper
  1. First of all, wash the shrimp under running water, dry them with a towel, and shell them.
  2. Slice them into small pieces.
  3. Prepare the marinade by mixing the soy sauce, oyster sauce, salt and pepper.
  4. Marinate the shrimp for about 15 minutes.
  5. Keep the marinade.
  6. Beat the eggs with a little salt.
  7. Heat a spoonful of oil in a wok.
  8. As soon as the oil is hot, pour the eggs into the pan and cook until set, flipping once.
  9. Cut the resulting omelet into slices.
  10. Add more oil to the wok, then stir-fry the onion and shrimp for 30 seconds.
  11. Follow the same procedure for the peas and ham.
  12. Stir-fry the rice in oil over a medium heat and add the onion, shrimp, peas and ham.
  13. Combine the marinade with the cornstarch mixture and mix it into the rice mixture.
  14. Garnish with the egg strips, and finish off with some cilantro or parsley if you like.
